Preheat an oven to 180 Celsius degrees (160 for fan oven).
In a food processor, whizz the flour, cold butter, demerara sugar and almond meal until crumbly.
Grease an oven-proof baking dish with butter.

Peel, core, and cut the apples into slices; put them in a mixing bowl, add the cinnamon and sugar, mix well. The amount of sugar to be used depends on the apples: if I use sweet apples sometimes, I don't add any sugar.
